baby kale & mango salad
Incredibly simple recipes are sometimes the biggest crowd pleasers. This healthy and refreshing salad is the perfect hardy side dish to pretty much any protein. May I suggest you serve it alongside some Whole Herb Roasted Chicken? You won’t regret it.
For ease, I like to buy the already peeled and sectioned mangoes from Costco (Sam’s might have them too). I diced the mangoes and sprinkled them over a bed of baby kale greens. Although I picked up my baby kale greens at Whole Foods, I know other grocery stores carry them.
I like well-balanced salads so I added some healthy fats (and texture) in the form of slivered almonds. If you’re a crouton lover, I suggest you start adding nuts to your salads. I think they make a great substitute.
I topped the whole thing off with a generous drizzle of balsamic vinegar. Delicious.

Serves 4
Ingredients:
4 cups baby kale greens (may sub regular chopped kale or spinach)
1 cup diced mangoes
1/4 cup slivered almonds
1/3 cup balsamic vinegar
Directions:
Combine all ingredients and drizzle with the balsamic vinegar.
Enjoy!
