Writing to you from a rainy Texas, we decided on a beverage tribute to our abnormally stormy summer. The Dark and Stormy cocktail is traditionally made of non-alcoholic ginger beer and dark rum served over ice. They’re spicy and delicious. I decided on a summery twist for the blustery drink by adding an awesome fresh strawberry puree.

Non-alcoholic Ginger Beer is essentially a ginger-flavored soda. It’s spicy and really refreshing.

Any dark rum will work with this recipe.

I strain the strawberry puree in cheesecloth, which can be purchased at most grocery stores, to ensure it’s smooth and seed-free.

This refreshing Strawberry Dark and Stormy will help you forget the perfectly warmed pool and golf fairways just begging for some divots.

Writing to you from a rainy Texas, we decided on a beverage tribute to our abnormally stormy summer. The Dark and Stormy cocktail is traditionally made of non-alcoholic ginger beer and dark rum served over ice. 

Ingredients  

  • 2 cups Whole Raw Strawberries
  • 5 pretty Strawberries for Garnish
  • 1 cup Dark Spiced Rum
  • 2.5 bottles Ginger Beer 12 FL oz. each
  • 5 cups Ice
  • Cheese Cloth

Instructions 

  • Chill five 16 FL oz. glasses with water and ice.
  • Cut the stems off your strawberries.
  • Put the strawberries in a blender and blend on high for at least 1 minute.
  • Line a small bowl with 4-ply cheesecloth. [Just fold cheesecloth over itself 4 times.]
  • Pour the pureed strawberries in the cheesecloth.
  • Fold the cheesecloth over the puree and squeeze the liquid out into the bowl.
  • Mix 1.25 cups strawberry puree with 1 cup dark spiced rum.
  • Discard the ice and water used to chill the glasses.
  • Pour ½ cup ice into each of the now chilled glasses.
  • Pour 3 ounces of the strawberry/rum mixture (2 shots worth) into each glass.
  • Top with the ginger beer (about ½ a bottle) and stir.
  • Garnish with a strawberry and serve!
