Cumin Lime Carrots
Looking for an easy side that will please everyone? These carrots are healthy, delicious, and take no time to whip up.
The cumin and lime flavors give carrots, one of my least favorite vegetables, a great flavor. I like to pair them with dishes like paleo street tacos & chili-seasoned skirt steak. Pair them with a Fed & Fit Skinny Margarita and call it a night.

Cumin Lime Carrots
Makes 9 Adult Servings
Ingredients:
2 cups carrots cut into discs
4 small limes juiced
1 tsp lime zest
1 Tbl cumin
1 tsp sea salt
1 tsp cracked black pepper
t tsp extra virgin olive oil
Directions:
Wash and skin the carrots.
Cut the carrots into ¼” discs.
In a medium sized saucepan, heat the oil until it runs thinly in the pan.
Add the carrots and sauté for about 5 minutes on medium/high heat.
Add the lime juice, cumin, salt, and pepper.
Simmer for another 3 minutes.
Add the zest, simmer for two more minutes, and serve.
Prep Time: 5 minutes
Cooking Time: 10 minutes
