Incredibly simple recipes are sometimes the biggest crowd pleasers, and this healthy and refreshing baby kale and mango salad is the perfect hardy side dish to pretty much any protein. May I suggest you serve it alongside some Whole Herb Roasted Chicken? You won’t regret it.

This might be the easiest side dish I’ve ever created, and you know I like easy!  For this baby kale and mango salad, I like to buy the already peeled and sectioned mangoes from Costco (Sam’s might have them too). I just quickly dice the mangoes and sprinkled them over a bed of pre-packaged baby kale greens. Although I picked up my baby kale greens at Whole Foods, I know other grocery stores carry them.

You’ve GOT to give baby kale a try.  It’s a much more delicate leaf than the traditional lacinto or dino kale that you might see in the grocery aisle and makes for a fantastic salad green.  There’s not de-stemming or massaging involved, which is a bonus in my book! Ease always wins in this house.

I like well-balanced salads so I added some healthy fats (and texture) in the form of slivered almonds. If you’re a crouton lover, I suggest you start adding nuts to your salads. I think they make a great substitute, with just the right amount of crunch!

I topped the whole thing off with a generous drizzle of balsamic vinegar and you’ve got yourself the perfect baby kale and mango salad.  It’s great for a quick salad side at your next dinner party, or add your favorite protein for a full well balanced main course meal with a variety of flavors.  You’ve got everything you could possibly need with all the textures, a sweet burst of flavor with the mangoes, a salty compliment with the balsamic, and the crunch from the slivered almonds.  This could quite possibly be my favorite meal!
