Goat Cheese Stuffed Figs
This fig recipe is my go-to appetizer. I’ve experimented with a few variations and am confident that I’ve concocted the most fabulous recipe sure to knock your guests’ socks off. I make it at least once a week – due mostly to high demand.
It’s extremely simple and provides just the right amount of food to keep your family and dinner guests happy while you take your time finishing the rest of the meal.
How is it done? Simply cut the stem off your figs and score with an X. I then stuff with a small amount of goat cheese, wrap with bacon, and finish with a drizzle of honey and balsamic vinegar. Pop them in the over for about 10 minutes. You’ll have everyone vowing that they are “now fig lovers.”
Figs are a fantastic little fruit. They are rich in anti-oxidants, help stabilize blood sugar, and can provide a metabolic boost. The bacon, goat cheese, and honey balsamic drizzle are great disguisers if you want to sneak these ancient treats into your family’s diet.
One tried and true trick to achieving perfectly crispy bacon is opting for the pre-cooked variety. This way, you don’t burn your fig waiting for the bacon to crisp. Pre-cooked bacon is also considerably lower in fat and calories. It can be found by most breakfast meats in the grocery store.
Bacon Wrapped Goat Cheese Stuffed Figs~ 5 mins 10 mins 0:10
- 12 fresh black figs
- 12 slices pre-cooked bacon
- 1/4 cup fresh soft goat cheese
- 2 Tbl raw honey
- 2 Tbl balsamic vinegar
- Toothpicks for anchoring.
Preheat your oven to 375.
Line a metal baking sheet with aluminum foil (makes for zero cleanup!)
Wash your figs and pat dry.
Cut the tops of your figs off.
Cut an X into the top of the fig – going about halfway down the length of the fig.
Spoon approximately 1 tsp goat cheese into each fig.
Wrap one piece of bacon around each fig. Secure with a toothpick.
Drizzle each fig with approximately ½ tsp honey and ½ tsp balsamic vinegar.
Bake at 375 for 10 minutes.
Plate and enjoy!
