These cumin lime carrots are the easiest side dish that will please everyone! They’re healthy, delicious, and take no time to whip up.

The cumin and lime flavors give carrots, one of my least favorite vegetables, a great flavor. I like to pair them with dishes like paleo street tacos & chili-seasoned skirt steak. Pair them with a Fed & Fit Skinny Margarita and call it a night.

Cumin Lime Carrots

These cumin lime carrots are the easiest side dish that will please everyone! They’re healthy, delicious, and take no time to whip up.

Ingredients  

  • 2 cups carrots cut into discs
  • 4 small limes juiced
  • 1 teaspoon lime zest
  • 1 tablespoon cumin
  • 1 teaspoon sea salt
  • 1 teaspoon cracked black pepper
  • 1 teaspoon extra virgin olive oil

Instructions 

  • Wash and skin the carrots.
  • Cut the carrots into ¼” discs.
  • In a medium sized saucepan, heat the oil until it runs thinly in the pan.
  • Add the carrots and sauté for about 5 minutes on medium/high heat.
  • Add the lime juice, cumin, salt, and pepper.
  • Simmer for another 3 minutes.
  • Add the zest, simmer for two more minutes, and serve.

  1. I’m confused. If each serving is approximately 1/2 a cup how does that make 9 servings when you only use 2 cups of carrots?
