Mediterranean Chimichurri

Ingredients

  • 1/2 cup olive oil
  • 1/3 cup red wine vinegar
  • 1/2 cup fresh cilantro, stems and leaves
  • 1/2 cup fresh flat-leaf parsley, stems and leaves
  • 4 garlic cloves, minced
  • 1 tablespoon fresh oregano
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon fine sea salt

Instructions

  1. Place all ingredients in a blender and blend until smooth. 
  2. Serve as a condiment with any beef, chicken, or seafood, or on top of eggs!
