These dark chocolate almond butter date bites check ALL the boxes. The right balance of sweet and salty? Yep. Easy to make? You betcha. Filled with real food ingredients including satiating fats? These little bites couldn’t be easier to make, and they are the perfect thing for this time of year when you feel like maybe you need to scale back your sugar consumption a bit, but are still craving just a little something sweet.
Almond Butter Dates Ingredients
To make these delicious almond butter dates, you’ll need:

- Dates – what would a stuffed date be without the dates?! You’ll use 24 dates in this recipe to make 24 perfectly sweet and salty bites!
- Almond Butter – a ½ cup of almond butter makes for the creamiest texture inside of the dates.
- Chocolate – 5 ounces of melted dark chocolate or dark chocolate chips make these feel like a truly indulgent sweet treat.
- Sea Salt – finish your dates with a sprinkle of sea salt to taste!
Ingredient Modifications
This is a really simple recipe, so not a whole lot by way of modifications, but here are some ideas:
- Use another nut butter: this recipe calls for almond butter, but you can absolutely use any nut butter that you desire! Cashew butter, peanut butter, or hazelnut butter would all be tasty.
- Use milk chocolate: not a fan of dark chocolate? Use milk chocolate instead!
- Omit the salt: if you’re limiting salt or prefer to keep things sweet, simply omit the salt altogether.

Which chocolate is best for coating dates and almond butter?
From a technical standpoint, the best chocolate for dipping/coating has a minimum of 31% cocoa butter so that it can be easily tempered (this is the process that helps chocolate get that extra “snap” when it re-hardens). With that said, since we aren’t making a super technical, chocolate candy, you really can’t go wrong with whatever chocolate you choose. I say go with what your personal preference is! I chose dark chocolate for the rich flavor contrast to the sweet date.
How do you pit dates for stuffing?
There are a couple of easy ways to pit dates (or, for ease, you can also buy already-pitted dates!). For this recipe, I recommend using a knife to carefully slice the date lengthwise, then use your thumbs to pry the sides open while using your index fingers on the back of the date to push the pit forward. You’ll pull the pit out once it is exposed, leaving an opening primed for stuffing.
How to make Almond Butter Stuffed Dates with Chocolate
These dark chocolate almond butter date bites are SO simple to make, and they lend themselves very well to making ahead of time and storing in your refrigerator to eat any time you start to get a hankering for something sweet. Here’s how you’ll make them:






- Line a cookie sheet with parchment paper – first, line a cookie sheet with parchment paper so that you have a landing space for your dates once they are stuffed and dipped.
- Pit the dates – if you are working with dates that aren’t pitted, remove the pit from each date by making a slice along the date lengthwise, then push the pit out using your index fingers on the back of the date. If you are using pre-pitted dates, make a cut lengthwise along the date for stuffing.
- Stuff with almond butter – spoon about 2 teaspoons of almond butter inside each date, then place on the lined cookie sheet.
- Melt chocolate – melt your chocolate in the microwave (start with 30 seconds, stir, then heat in 15 second intervals and stir until fully melted) or using a double broiler over the stove.
- Dip and sprinkle – dip your stuffed dates halfway in the melted chocolate, then place them back on the lined cookie sheet and sprinkle with sea salt.
- Refrigerate – place the cookie sheet in the fridge for one hour, or until the chocolate is set.
- Enjoy – serve and enjoy, or transfer to a container and store in the fridge for later!
