  • Dates – what would a stuffed date be without the dates?! You’ll use 24 dates in this recipe to make 24 perfectly sweet and salty bites!
  • Almond Butter – a ½ cup of almond butter makes for the creamiest texture inside of the dates.
  • Chocolate – 5 ounces of melted dark chocolate or dark chocolate chips make these feel like a truly indulgent sweet treat.
  • Sea Salt – finish your dates with a sprinkle of sea salt to taste!

This is a really simple recipe, so not a whole lot by way of modifications, but here are some ideas:

  • Use another nut butter: this recipe calls for almond butter, but you can absolutely use any nut butter that you desire! Cashew butter, peanut butter, or hazelnut butter would all be tasty.
  • Use milk chocolate: not a fan of dark chocolate? Use milk chocolate instead!
  • Omit the salt: if you’re limiting salt or prefer to keep things sweet, simply omit the salt altogether.

These dark chocolate almond butter date bites are SO simple to make, and they lend themselves very well to making ahead of time and storing in your refrigerator to eat any time you start to get a hankering for something sweet. Here’s how you’ll make them:

  1. Line a cookie sheet with parchment paper – first, line a cookie sheet with parchment paper so that you have a landing space for your dates once they are stuffed and dipped.
  2. Pit the dates – if you are working with dates that aren’t pitted, remove the pit from each date by making a slice along the date lengthwise, then push the pit out using your index fingers on the back of the date. If you are using pre-pitted dates, make a cut lengthwise along the date for stuffing.
  3. Stuff with almond butter – spoon about 2 teaspoons of almond butter inside each date, then place on the lined cookie sheet.
  4. Melt chocolate – melt your chocolate in the microwave (start with 30 seconds, stir, then heat in 15 second intervals and stir until fully melted) or using a double broiler over the stove.
