Browned Butter Sage Roasted Chicken

I have a treat for you, my Fed+Fit family! Today I’m thrilled to highlight one of my fellow food bloggers and nutritionists, Caroline Potter. Caroline is the beauty and brains behind the blog, Colorful Eats Nutrition. I absolutely adore her work. Browned Butter Sage Roasted Chicken

Thank you Cassy for letting me share one of my favorite fall recipes on Fed+Fit today! Although, I have never actually met Cassy in person, I feel like we would be instant friends. I mean she is hilarious, has the cutest, fluffy white dog (who would be best buds with my golden retriever), and loves to eat great food!

I found Cassy’s blog a while back and absolutely loved her joyful and fun approach to nutrition. When I first switched to a grain free diet due to my auto-immune disease, I kept seeing recipes for cauliflower everything, and must admit I have a huge fear of cauliflower. Well, the other day I finally made cauliflower rice and now have been craving it with everything. Thanks Cassy for one of the most simple cauliflower rice recipes on the internet, and I owe it to you for conquering my fear of this white vegetable!

The changing of seasons and transition to fall calls for comfort food and there is something about roasted chicken and rice that just brings comfort to the dinner table. To me, healthy eating is not about focusing on the foods you can’t eat, but rather using a little creativity and to re-create the foods you love. The table is a place to gather, laugh, and eat, coming together for food and fellowship. I hope this meal brings comfort food to your table, passing and sharing with your friends and family!

So, lets talk about browned butter. Once you make this brown butter sauce, you will be wanting to drizzle it on everything. Browned butter transforms your kitchen into a magical place with the most dreamy aroma. Walking into a kitchen that smells good always makes me hungry, so this is a great dish to serve for guests or a basic weeknight dinner. This recipe is simple just keeping to the basics such as salt, butter, garlic and herbs but the combination of flavors is fantastic!

Grass-fed butter is packed with important nutrients, vitamins and minerals. When introducing people to a real food diet, I love explaining the countless benefits of introducing healthy fats such as butter into your daily diet. And most importantly it adds irreplaceable flavor to your meal. If you cannot tolerate dairy, try substituting grass-fed ghee for this recipe!

Browned Butter Sage Roasted Chicken

This roasted chicken is simple to make and only requires a handful of ingredients, most of which I am sure you have on hand. It’s a great weekday meal or a meal to serve when you have guests over with a side salad or roasted vegetables. I threw the chicken in the oven, then moved onto making the cauliflower rice and dinner was on the table in about 40 minutes from start to finish. I served this meal with some parmesan cheese shavings as I do really well with raw or grass-fed cheeses, but left this ingredient optional for those who cannot tolerate dairy. I love aged Pecorino which is a salty, sharp Italian cheese made from sheep’s milk. It is a great cheese to garnish with especially for those who cannot tolerate cow’s milk cheeses.

Browned Butter Sage Roasted Chicken

This recipe is simple just keeping to the basics such as salt, butter, garlic and herbs but the combination of flavors is fantastic!

Ingredients  

Browned Butter Sage Roasted Chicken:

  • 3 pounds chicken breast & legs bone-in, skin-on
  • 1 red onion sliced
  • 2 tablespoons olive oil
  • 2 tablespoons butter sliced
  • 5 cloves garlic crushed
  • 1 tablespoon fresh chopped sage heaping full
  • 1 1/2 teaspoons sea salt
  • 1/2 teaspoon fresh cracked black pepper

Crispy Sage Browned Butter Sage:

  • 8 tablespoons butter
  • 1/4 cup fresh chopped sage
  • 1/2 teaspoon sea salt

For the meal:

  • 1 recipe cauliflower rice
  • garnish with parmesan shavings if you can tolerate dairy

Instructions 

  • Preheat oven to 400 degrees F.
  • Pat chicken dry with a paper towel and place in a large baking dish.
  • Drizzle chicken with olive oil, using your hands to coat all sides.
  • Season the chicken with salt and pepper, then rub in crushed garlic. Sprinkle chopped sage on top. Arrange onions throughout the pan. Place slices of butter on top of chicken, throughout the pan.
  • Roast chicken for 33-37 minutes, depending on the size of your chicken pieces.
  • While the chicken is cooking, make the cauliflower rice.
  • Once you have the chicken and rice cooking, make the browned butter sauce about 5 minutes before you are ready to serve.
  • Heat a small skillet to medium heat. Add butter and allow it to brown and sizzle for about 2 minutes, then turn down the heat. Once the butter is brown and gives off a nutty aroma. Remove from heat and add in the chopped sage and salt. The sage will turn crispy as it hits the hot butter.
  • Add a scoop of rice to each plate then top with roasted chicken and a generous drizzle of crispy sage browned butter. {Garnish with parmesan shavings if desired.}
  • Serve and enjoy!
