Why figs? Figs are low in calories and rich in antioxidants, potassium, calcium and iron. Figs are also in season. They stay in season until the about the end of November – so you have until then to try some.

Why salmon? Salmon is very rich in omega-3 fatty acids. What do omega-3 fatty acids do for you? They assist with brain function, could help lower your risk for heart disease, and reduce inflammation – an important quality for all athletes.

Why honey? It’s tasty goodness that, although isn’t necessarily a health food, isn’t the worst thing for you.

For the full meal experience, start on the garlic apricot wild rice first (the longest cooking time), move to making the salmon glaze, chop your veggies for the raw fennel zucchini salad, then cook your salmon, finish your rice, toss the salad, and serve!

Honey Glazed Salmon with Caramelized Figs

Figs, honey, and salmon – an incredible combination. This beautiful dish looks, tastes, and feels gourmet. Make it for a special occasion or just as a nice treat for you to enjoy yourself.

Ingredients  

  • 4 fresh wild salmon fillets 3oz – 6oz depending on your need
  • 6 fresh purple figs
  • 1/2 cup raw local honey
  • 1 tablespoon chili powder
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon steak seasoning
  • 2 teaspoons extra virgin olive oil

Instructions 

  • Preheat the oven to 350 degrees.
  • In a small saucepan, combine the honey, vinegar, and chili powder. Let it simmer on low so that all the ingredients can melt and combine.
  • Chop your figs into about ¼ th square inch pieces and place on a baking sheet lined with aluminum foil with formed sides (like a large bowl). Pour about half of the honey glaze over the figs. Toss then put in the oven for about 15 minutes.
  • Dust the salmon filets in the steak seasoning.
  • Turn the heat to high on medium sauté pan and pour in the oil. When the oil runs thin (when it’s heated), place the salmon filets top side down. Let them sit here for about 5 minutes. This will give them a nice color and texture.
  • After the 5 minutes, turn them over and pour the rest of the honey glaze over them. Pop them in the oven for about 10 minutes.
  • When the figs and salmon are done in the oven, take them out and baste with the honey glaze that has melted off.
  • Plate the salmon first then the caramelized figs on top.
  • Enjoy!
