Meatballs are one of my favorite things to meal prep because they store, reheat, and freeze well, the flavor possibilities are nearly endless, and their bite-sized nature makes them a fun option for kiddos! In the past, we’ve shared Greek Meatballs, Teriyaki Meatballs, and French Onion Meatballs, and now we’re combining our favorite burger flavors and baking them into meatballs to give you these tasty burger bites.

Another reason I really love to make meatballs for my meal prep is because it is SO easy to change up the flavors. We find that meatballs truly don’t need any binders (breadcrumbs, almond flour, eggs, etc) to taste good, so making a few different meatballs is truly just a matter of changing the seasoning! Here, we chose to do BBQ bacon burger bites, a savory brie burger bite, and a Tex-Mex burger bite.

In the interest of keeping things simple, we chose to bake these burger bites. To make them, you’ll simply mix together all of the ingredients, form them into balls, then bake on a parchment paper-lined sheet pan and bake them for 18 minutes. If you want a meatball that’s more browned all the way around, you can place them on a rack to bake instead. Baking the meatballs in the oven saves a lot of time and mess vs. pan-frying, and allows you to make a much bigger batch.

Once your meatballs are done, the last step is to serve them! We recommend pairing them with oven-baked fries, roasted veggies, or a side salad. The Tex-Mex meatballs would also make for a delicious bowl served over rice or cauliflower rice, and accompanied by sauteed onions and peppers. Finish everything off with a yummy dipping sauce and you’ve got a dinner that everyone will love!

The best way to please a crowd is with delicious options!  These 3 tasty mini burger bites are the perfect protein option for your next gathering, or a wonderful meal prep option!

Ingredients  

Brie burger bites*:

BBQ Bacon Burger Bites:

  • 1 pound ground beef
  • 2 tablespoons BBQ sauce
  • 4 slices bacon cooked and crumbled
  • 1/2 teaspoon coarse sea salt
  • 1/4 teaspoon black pepper
  • Finely diced red onion for garnish

Tex-Mex Burger Bites:

Instructions 

  • Preheat the oven to 400 F and line a rimmed baking sheet with parchment paper.
  • Place all ingredients for the meatball of your choice in a large bowl and work the mixture with your hands until fully combined.
  • Roll the meatballs into 1 inch balls and place on the parchment paper lined baking sheet. Bake for 18 minutes, until browned on top, then serve!
