Oven Roasted Potatoes Recipe

These oven roasted potatoes are crispy on the outside + soft and creamy on the inside — they make for the tastiest quick dinner side!


  • 1 ½ pounds Yukon gold potatoes
  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper


  1. Preheat the oven to 400°F.
  2. Chop the potatoes into 1-inch cubes and place them on a baking sheet.
  3. Toss the potatoes with the extra-virgin olive oil, sea salt, and pepper, then spread out in an even layer on the sheet pan.
  4. Bake the potatoes at 400°F for 45 minutes.
  5. Serve and enjoy!
