Hello friends. Are you ready for this? First, allow me to entice you with a few words …dessert, bing cherries, single serving, honey, paleo(ish), and easy. My goodness – this is tasty business.

Are you familiar with those days when you do your best to eat healthy/wholesome meals? You’re “good” all the way through dinner. THEN, the dessert hour is upon you. What do reach for? A piece of fruit? Good for you! I’m not always that good. I’ve made this dessert to help you through those times when you’re craving pie, or cobbler, or both. This delicious cobbler alternative will fool your family into thinking they’re eating the traditional sugar and butter filled dish.

If cooking with almond meal is new for you, worry not. It can be found at most grocery stores and serves as a great replacement to flour. I recommend keeping a bag of it on hand. You’ll see me use it in everything from meatballs to baked desserts.

If you’re cooking for more than yourself, just multiply the amounts by the number of people. Feel free to make this dish “family style” by baking it in a larger dish and increasing the time in the oven.

 

Paleo Cherry Cobbler

I’ve made this dessert to help you through those times when you’re craving pie, or cobbler, or both. This delicious cobbler alternative will fool your family into thinking they’re eating the traditional sugar and butter filled dish.

Ingredients  

  • 10 fresh bing cherries
  • 1 tablespoon almond meal
  • 1 teaspoon raw local honey
  • 1 teaspoon balsamic vinegar aged, if you have it
  • 1 teaspoon egg whites
  • 1 teaspoon cinnamon
  • 1 teaspoon chopped pecans

Instructions 

  • Preheat your oven to 375 degrees. Set a small ramekin aside.
  • Rinse, pit, and cut the cherries into quarters.
  • Mix the cherries with the honey and balsamic vinegar and pour into the ramekin.
  • Mix the almond meal, cinnamon, and egg whites together. Put the mixture on top of the cherries and sprinkle with the chopped pecans.
  • Place the dish in the oven for approximately 13 minutes (or until the top is golden). Remove and let cool for a few minutes.

  1. Multiplied this by 12 and made it in a pie dish…gone in seconds!!!!
    I substituted lemon juice for the vinegar and it tasted amazing.

    1. Great question, Caroline!! I am currently working on a page that will explain all about paleo, the subtle variations, and why it’s a great idea. Until then, I’ll give you a quick explanation and a few links to some great resources.

      1. Paleo – aka, the Paleolithic Diet – is a concept of consuming only whole, unprocessed, fresh ingredients …like the cavemen did. You get to fill your plate and tummy with tons of veggies, lean proteins, fruits, and nuts. This diet is optimal for people wanting more energy, facing digestive/other health issues, and athletes looking to keep their body in optimal physical fitness. A couple foods not paleo-approved are grains and dairy. I say, all things in moderation. I try to eat Paleo as much as possible (b/c it’s easy!) but I do love me some goat cheese and the occasional whole wheat naan bread. ☺
