Paleo Cherry Cobbler

I’ve made this dessert to help you through those times when you’re craving pie, or cobbler, or both. This delicious cobbler alternative will fool your family into thinking they’re eating the traditional sugar and butter filled dish.

Ingredients

  • 10 fresh bing cherries
  • 1 tablespoon almond meal
  • 1 teaspoon raw local honey
  • 1 teaspoon balsamic vinegar aged, if you have it
  • 1 teaspoon egg whites
  • 1 teaspoon cinnamon
  • 1 teaspoon chopped pecans

Instructions

  • Preheat your oven to 375 degrees. Set a small ramekin aside.
  • Rinse, pit, and cut the cherries into quarters.
  • Mix the cherries with the honey and balsamic vinegar and pour into the ramekin.
  • Mix the almond meal, cinnamon, and egg whites together. Put the mixture on top of the cherries and sprinkle with the chopped pecans.
  • Place the dish in the oven for approximately 13 minutes (or until the top is golden). Remove and let cool for a few minutes.
