Paleo Apple Cobbler

I don’t know about you all, but I’m a dessert gal. I usually need something sweet after dinner. My favorite dessert recipes are usually various renditions of cobblers.

Ingredients

  • 4 Green Apples
  • 1 Cup Almond Meal
  • 1 Large Lemon Juiced
  • 2 tablespoons Honey
  • 2 tablespoons Cold Virgin Coconut Oil
  • 1 tablespoon Cinnamon

Instructions

  • Preheat your oven to 375.
  • Set eight 3” ramekins aside on a baking sheet.
  • Clean and cut your apples into thin slices.
  • Toss the apples with the honey, lemon juice, and half the cinnamon.
  • Stir the other half of cinnamon into the almond meal.
  • With either your hands or a pastry knife, mash the coconut oil into the almond meal. If it is hard (not melted), it is easier to work with.
  • Work with the almond meal until it is worked through achieves a crumbly texture.
  • Evenly distribute the apples in the ramekins and top with an even amount of the almond meal crumble.
  • Bake for about 30 minutes, or until golden brown.
  • Let cool for about 5 minutes then enjoy!!
