Baked Halibut Sheet Pan Dinner

- 4, 6-8 ounce halibut filets
- 1 pound baby red potatoes
- 1 small red onion cut into sixths
- 1 bunch of asparagus thick stems removed
- 1 tablespoon olive oil
- 1/4 teaspoon pepper
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 cup ranch dressing
Preheat oven to 350 F degrees.
Toss potatoes, red onion, and asparagus in olive oil, pepper, salt, and garlic powder. Spread out on a sheet pan and bake at 350 F for 30 minutes.
Combine halibut with ranch dressing in a medium-sized bowl, making sure halibut is fully covered. Place on top of vegetables on sheet pan. Add additional salt and pepper to taste.
Raise the heat to 425 F and bake the whole pan for an additional 15-20 minutes, until halibut is flaky and fully cooked through.
Remove from oven and let sit for 5-10 minutes and serve!
