Paleo Sweet Potato Breakfast Hash

For the perfect, substantial breakfast, whip up this hash and put an egg on top!

Ingredients

  • 1 Large Sweet Potato {makes about 3 cups shredded}
  • 1 pound Pork Sausage
  • 1/2 cup Chopped Yellow Onion
  • 4 Cloves Garlic Minced
  • 1/2 Lemon Juiced
  • 1/4 teaspoon Black Pepper
  • 1/4 cup Chopped Flatleaf Parsley
  • 1 Fried Egg per Serving {optional}

Instructions

  • Over medium/ high heat, cook the pork sausage until brown and crispy.
  • Remove sausage from the pan and strain off excess grease.
  • Add onions to the pan over medium heat and cook until translucent. Add the garlic and stir.
  • Shred the sweet potato and add to the onions and garlic.
  • Cook over medium heat until the sweet potato starts to wilt and brown.
  • Add the lemon juice, black pepper, and browned sausage to the pan.
  • Stir and plate with a fried egg and flatleaf parsley.
  • Enjoy!
