Paleo Sweet Potato Breakfast Hash

Ingredients

Large Sweet Potato {makes about 3 cups shredded}

Pork Sausage
1/2
cup
Chopped Yellow Onion

Cloves
Garlic Minced
1/2
Lemon Juiced
1/4
teaspoon
Black Pepper
1/4
cup
Chopped Flatleaf Parsley
1
Fried Egg per Serving {optional}
Instructions
Over medium/ high heat, cook the pork sausage until brown and crispy.
Remove sausage from the pan and strain off excess grease.
Add onions to the pan over medium heat and cook until translucent. Add the garlic and stir.
Shred the sweet potato and add to the onions and garlic.
Cook over medium heat until the sweet potato starts to wilt and brown.
Add the lemon juice, black pepper, and browned sausage to the pan.
Stir and plate with a fried egg and flatleaf parsley.
Enjoy!
