No Bake Peanut Butter Chocolate Oatmeal Cookies

These no bake oatmeal cookies are an easy-to-make healthier treat that tastes just like peanut butter cups!

Ingredients

  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil melted
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1 cup natural peanut butter
  • 2 cups rolled oats

Instructions

  • Heat the maple syrup or honey, coconut oil, cocoa powder, and vanilla over medium heat. Once bubbling, stir in the peanut butter. Let cook for an additional 1-2 minutes, until the mixture is smooth and fully incorporated. Remove from heat.
  • Stir the oats into the peanut butter honey mixture, then take about 1/4 cup of the mixture at a time, roll into a ball, then place on a parchment paper-lined cookie sheet and flatten into a cookie.
  • Refrigerate for 2-4 hours, until set, then enjoy!

Notes

  • You can substitute the peanut butter for any nut butter here, including almond butter, sunflower seed butter, or cashew butter!
