Oven Baked Sweet Potato Fries

- 1 medium sweet potato sliced into 1/4-inch-thick fries
- 2 teaspoons cornstarch or arrowroot starch
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1 tablespoon extra-virgin olive oil
Preheat the oven to 400°F and line a sheet pan with parchment paper.
Toss the sweet potatoes with the cornstarch/arrowroot, salt, pepper, garlic powder, and paprika until the fries are evenly coated, then drizzle the olive oil over top and toss to coat again.
Spread the fries out on the parchment paper-lined baking sheet, making sure they don’t overlap.
Bake for 25 minutes, then toss and bake for another 15-20 minutes, or until crisp.
