Course: Breakfast
Cuisine: American
Servings: 4 servings
Author: Melissa Guevara

Ingredients

For the sweet base:

  • ½ cup Greek yogurt plain, unsweetened
  • 1 egg yolk
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1 lemon zest of, optional

For the savory base:

  • ½ cup Greek yogurt plain, unsweetened
  • 1 egg yolk
  • 1 teaspoon garlic powder

Instructions

  • Preheat your oven or air fryer to 350℉. If you’re baking in the oven, you’ll also want to prep a baking sheet by lining it with parchment paper.
  • Add your sweet or savory ingredients to a bowl and whisk until smooth to combine.
  • Using a spoon, press down the center of the bread to make a well for the custard base.
  • To each piece of bread, add a couple spoonfuls of yogurt filling (you may use more for a larger piece of bread) and your toppings.
  • If you’re using an air fryer, add your toast to the basket and bake for 5 minutes (6 minutes if you have a thicker layer of toppings like the ham and cheese). If you’re using the oven, place your toast on your parchment lined baking sheet and bake for 12 minutes.
  • Garnish your toast with any additional ingredients.
  • This yogurt toast is best served warm when the bread is crisp and the filling is warm and creamy. Enjoy!

Notes

Yogurt Toast Toppings:
To the sweet base:
  • Peanut Butter Chocolate Chip - top with a drizzle of peanut butter and sprinkle of dark chocolate chips, bake, and then dust with powdered sugar. You’ll truly feel like you’re having dessert for breakfast!
  • Blackberry Jam and Thyme - bake your custard on the bread (without toppings), then once removed from the air fryer or oven, top with a spoonful of blackberry jam and sprinkle of fresh thyme. This flavor combo is the perfect marriage of herbs and berries!
  • Bruleed Banana - top with sliced banana, bake, then top with white sugar and (this is the really fun part) caramelize the sugar with a blow torch. Now, I know that a blow torch is not a commonly found kitchen tool, so if you don’t have one lying around, you can also add a drizzle of honey over the banana before baking, and it is equally as delicious.
  • Pomegranate Fig - top with sliced fig and pomegranate seeds and bake. This crimson and purple beauty is sure to impress!
  • Peach, Mint, and Lime - top with sliced or diced peaches, bake, then add a chiffonade of mint and pinch of lime zest. This combo makes for the freshest flavors!
  • Maple Bacon - top with a drizzle of maple syrup and crumbled bacon and bake. A truly classic flavor combo in a whole new way!
  • Raspberry Lemon - top with raspberries, bake, then add a pinch of lemon zest to garnish. My take on the classic recipe with added brightness and perfectly baked raspberries that have a beautiful, jammy texture.
To the savory base:
  • Ham, Cheese, and Scallion - top with chopped ham and shredded cheese, bake, then garnish with a sprinkle of scallions. Fed + Fit team member Graysen says, “I could seriously eat this every day for breakfast.”
  • Soft-Boiled Egg, Capers, and Dill - bake your savory custard on the bread (without toppings), then once removed from the air fryer or oven, top with a soft-boiled egg (find our guide on making a perfectly jammy egg here), capers, drizzle of olive oil, fresh dill, and some flaky sea salt. If I had to pick a favorite, this one is it!
Ingredient Modifications:
  • Use a different bread - I made this recipe on gluten free bread, but brioche, sourdough, and croissant (this was the most epic in my opinion) are all really delicious options! You can really go with whatever your bread preference!
  • Make it dairy free - sub the Greek yogurt for a non-dairy yogurt option. I found that coconut yogurt was the best option and kept the custard thick and creamy.
  • Add seasoning - play with the base flavors by adding other dry seasoning. Cinnamon, nutmeg, and cocoa would be great additions to the sweet base, while you could really spice things up with the savory base (think paprika, turmeric, onion powder, and/or cayenne).
