Chocolate Covered Dates with Almond Butter

Dates are stuffed with almond butter then dipped in dark chocolate and sprinkled with sea salt for a simple, real-food dessert.

  • Line a cookie sheet with parchment paper so that you have a landing space for your dates once they are stuffed and dipped.
  • If you are working with dates that aren't pitted, remove the pit from each date by making a slice along the date lengthwise, then push the put out using your index fingers on the back of the date. If you are using pre-pitted dates, make a cut lengthwise along the date for stuffing.
  • Use about 2 teaspoons of almond butter per date and spoon inside of the date, then place on the lined cookie sheet. Repeat for each date.
  • Melt your chocolate in the microwave (start with 30 seconds, stir, then heat in 15 second intervals and stir until fully melted) or using a double broiler over the stove.
  • Dip your stuffed dates halfway in the melted chocolate, then place back on the lined cookie sheet and sprinkle with sea salt. Repeat for each date.
  • Place the cookie sheet in the fridge for one hour, or until the chocolate is set.
  • Serve and enjoy! Or transfer to a container and store in the fridge for later.

Notes

You can use any kind of nut butter you'd like in this recipe!
