Juicy Ground Chicken Meatball Recipe

Ingredients

  • 2 pounds ground chicken
  • 3 cloves garlic, minced
  • ½ yellow onion, finely diced
  • 1 egg
  • ½ cup panko bread crumbs
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  • Preheat the oven to 375°F. Add all of the ingredients to a large bowl and use your hands to mix it together.
  • Form the mixture into 2 tablespoon-sized meatballs and place them on a rimmed sheet pan.
  • Bake the meatballs for 15-20 minutes, until a meat thermometer inserted into the middle of the meatball registers 165°F.
  • Serve and enjoy as you'd like!

Notes

If you'd prefer to cook these meatballs in a skillet instead of in the oven, simply heat 2 tablespoons of avocado oil in a skillet over medium heat. Once hot, add the meatballs and cook on 3-4 sides until browned and cooked through, tossing every 4 minutes.
