Key Lime Pie Energy Balls

Servings: 12 Energy Balls
- 8 dates, pitted
- ¾ cup cashews
- ½ cup almond butter
- ⅓ cup unsweetened shredded coconut
- 2 scoops protein powder
- Zest of 2 limes
- Juice of 1 lime
- ½ teaspoon sea salt
- ½ cup white chocolate chips, divided
- 1 teaspoon coconut oil
Place the dates in a food processor and pulse until it looks caramel-like. Add the cashews and process until it forms a sand-like texture with the dates. Add the almond butter and coconut, then pulse again until evenly mixed. Add the protein powder, half of the lime zest, all of the lime juice, and sea salt. Process until smooth. Add half of the white chocolate chips and pulse 2-3 times to just lightly mix.
Use a large cookie scoop to portion the 12(ish) balls. The mixture will be a little crumbly, use your hands to press them firmly together.
Melt the remaining 1/4 cup of white chocolate chips with about 1 teaspoon of olive oil or coconut oil for about 30 seconds in a microwave. Drizzle the tops of the balls with the white chocolate and then finish them off with the rest of the lime zest.
Store in the refrigerator!
Recipe Tips:
- Use a cookie scoop to get even portions! We used a #24 (1.75 ounce) scoop here.
- Once you've used a cookie scoop to evenly portion out the balls, use your hands to roll and pack them together.
- To really keep things easy, skip the white chocolate drizzle topping. The energy balls are still every bit as delicious without it!
- These key lime energy balls last for up to 2 weeks in the fridge and 3 months in the freezer, so save yourself some time later on and double or even triple the recipe!
