Korean-Inspired Ground Beef Bowls

These Korean-inspired ground beef bowls are so delicious! They're loaded with rice, perfectly seasoned ground beef, quick pickled carrots and onions, an egg, and sriracha mayo. They're perfect for lunch or dinner and can be easily meal prepped ahead of time!

Ingredients

For the Pickled Carrots

  • 3 large carrots, cut into ribbons
  • ½ cup apple cider vinegar
  • 2 teaspoons black peppercorns

For the Sauce

  • 8 ounces coconut aminos
  • 1 tablespoon unseasoned rice wine vinegar
  • 2 teaspoons toasted sesame oil
  • ½ teaspoon fish sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon ginger
  • ¼ teaspoon red pepper flakes

For the Sriracha Mayo

  • ½ cup mayonnaise
  • 1 tablespoon fresh lime juice (the juice from about ½ of a lime)
  • 1-2 tablespoons sriracha

For the Bowls

  • 2 pounds ground beef
  • 1 cup white rice, dry
  • 4 eggs, fried, for serving
  • ¼ cup fresh cilantro, for serving
  • Pickled onions, for serving
  • Sesame seeds, for serving
  • 1 lime, cut into wedges, for serving

Instructions

  • Add the ribboned carrots, apple cider vinegar, and peppercorns to a jar with a lid, shake, and let sit for 30 minutes or overnight.
  • Whisk the coconut aminos, rice wine vinegar, toasted sesame oil, fish sauce, garlic powder, ginger, and red pepper flakes together in a bowl.
  • Cook the rice according to package instructions.
  • While the rice simmers, cook the ground beef over medium heat until crumbled and cooked through. Pour the sauce over the cooked ground beef and stir until evenly coated.
  • Whisk together the mayo, lime juice, and sriracha to make the sriracha mayo.
  • Assemble the bowls with white rice, the Korean-inspired ground beef, the carrots, onions, fried egg, cilantro, sriracha mayo, and sesame seeds. Serve and enjoy!
