Paleo Apple Cobbler

I don’t know about you all, but I’m a dessert gal. I usually need something sweet after dinner. My favorite dessert recipes are usually various renditions of cobblers.

This recipe for Paleo Apple Cobbler is one of my family’s favorites.

It’s unbelievably simple and extremely tasty. It reminds me summer BBQ parties and my mother’s kitchen.

All you need are green apples, almond meal, honey, lemon, cinnamon, and coconut oil. I don’t know about you, but I usually have all those ingredients on hand.

I like to make these cobblers personal-sized. It makes for a cute way to serve the dessert and makes for an easy way to portion control.

Although the cobbler is great just by itself, a dob of ice cream (coconut milk ice cream?) takes it from “ooohh” to “ahhhh!!”

Serving size: 1 cup

186 Calories; 11 g Fat; 3 g Protein; 14 g Sugar

Paleo Apple Cobbler

Makes Approximately 8 Adult Serving

Ingredients:

4 Green Apples

1 Cup Almond Meal

1 Large Lemon Juiced

2 Tbl Honey

2 Tbl Cold Virgin Coconut Oil

1 Tbl Cinnamon

Directions:

Preheat your oven to 375.

Set eight 3” ramekins aside on a baking sheet.

Clean and cut your apples into thin slices.

Toss the apples with the honey, lemon juice, and half the cinnamon.

Stir the other half of cinnamon into the almond meal.

With either your hands or a pastry knife, mash the coconut oil into the almond meal. If it is hard (not melted), it is easier to work with.

Work with the almond meal until it is worked through achieves a crumbly texture.

Evenly distribute the apples in the ramekins and top with an even amount of the almond meal crumble.

Bake for about 30 minutes, or until golden brown.

Let cool for about 5 minutes then enjoy!!

Time: 45 minutes

    Hi Cassandra,

    Thank you for this wonderful recipe. I found you when I did google search for Paleo cobbler. I took your recipe and switched out the apples for peaches and tweaked a few other things and it was absolutely divine. I’ll try the apples another day. Special thanks for the topping recipe, I’ll be able to use this on many things.
