Roasted to perfection and tossed in a spicy mayo, this Buffalo Broccoli is a tasty way to revive the classic broccoli side dish!

Broccoli โ€ฆat first glance, not the most thrilling of recipe topics. I HEAR YOU. When I think of a broccoli recipe, Iโ€™m thinking that itโ€™ll fall into one of the following possible categories: stir-fried, mushy (boiled), raw (with a dip and destined to get caught in your teeth), or roasted. While some of those options are lovely, Iโ€™d like to throw out a NEW way to broccoli. Itโ€™s a (dare I say?) tastier, more interesting way to enjoy the most popular cruciferous vegetable.

Weโ€™re going to roast the broccoli until slightly crispy, toss said roasted broccoli in a heavenly mixture of hot sauce + mayo, and then return the broccoli to the oven so that the flavor has a chance to set and crisp. This Buffalo Broccoli is, in a word, remarkable.

I recommend doubling this Buffalo Broccoli recipe if you have broccoli-lovers in your home because it will go FAST.

Switching gears to this baby in my belly! Iโ€™ve been getting lots of requests for updates. Know that Iโ€™m planning to post a 1st trimester recap very soon! In the meantime, I want you to know that Iโ€™m feeling GREAT. A very kind reader (like so many of you) commented on our Instagram pregnancy announcement that she wished me a โ€œvery boring pregnancy.โ€ I loved that and Iโ€™m happy to say that it has been boring! Full details will be included in my 1st trimester recap, but everything has been smooth sailing.

All that being said, Iโ€™d love some help! Weโ€™re at the beginning stages of starting a baby registry. Iโ€™d love to know, for those of you whoโ€™ve had experience, what would you consider to be your top 2 or 3 pieces of baby gear? (Please leave your suggestions in a comment on this post.) Weโ€™re definitely a less-is-more kind of family, so we donโ€™t really want every gadget and gizmo in the book, but would instead like to focus on the SURE bets. Also note that baby girl has 5 older girl cousins, so weโ€™ll be happily partaking in any hand-me-downs offered. So far, weโ€™ve acquired an AWESOME owlet oxygen baby monitor (soft monitor that will go on her foot while sheโ€™s sleeping that would alert us if she has any trouble) and a fetal doppler heartbeat monitor (similar to this one) that we can use later in this pregnancy if weโ€™re ever concerned.

Buffalo Broccoli

Roasted to perfection and tossed in a spicy mayo, this Buffalo Broccoli is a tasty way to revive the classic broccoli side dish!

Ingredients  

  • 2 large heads of broccoli cut into florets (6 cups)
  • 2 teaspoons extra virgin olive oil
  • 1/4 teaspoon fine sea salt
  • 1/4 cup Paleo mayo
  • 2 tablespoons buffalo sauce

Instructions 

  • Preheat oven to 375 degrees.
  • Toss the broccoli florets with olive oil and sea salt. Lay out on a baking sheet, making sure that the broccoli isn’t crowded. Bake for 30 minutes or until the broccoli starts to brown.
  • While the broccoli is baking, whisk the mayo and buffalo sauce in a large mixing bowl.
  • Add the broccoli to the large bowl and combine with the buffalo mayo, then put it back on the baking sheet.
  • Turn the oven up to 400 then add the broccoli back to the oven. Bake for 8-10 minutes until the sauce has formed a crust.

  1. 1) the Aden and Aneis silky soft Muslin swaddle blankets (although maybe you’ll get these handmedowns too)
    2) diapers in larger sizes, in particular Target’s Up and Up brand. They are the best!
    3) and bonus tip (plus what mom can’t resist giving her 2 cents especially when asked!) in case you get 1) from big cousins, registering for a forehead digital thermometer is awesome!! I could never take my babies’ temp in the ‘traditional’ way

  3. Recipe looks yummy! My son is almost three months old, and we have found a few essentials that work for him:
    – hiccapop wipe warmer
    – halo sleep sacks
    – mud pie sheep swaddle with snaps
    – Boppy newborn lounger
    – mamaroo seat
    – Graco dream glider for sleep until crib

    We are also loving Honest company diapers; they prevent blowouts better than Seventh generation or bambo brand.

    I would caution the use of owelet due to the radiation it emits. My personal belief is to try to reduce their exposure as much as possible (cellphones on airplane mode, etc.). It only took about two weeks of constantly checking on him while he slept to realize he was fine, and I needed to sleep myself!

  4. Our must haves were a bouncy seat (really any kind of seat that sways or bounces) so you can put baby down to take a shower, etc, a carrier (we have a Maya ring sling and an Ergo, and we used them both a lot), and a nursing pillow (I had a Boppy).

  5. A shopping cart cover for your many HEB trips…because our kids can pick up nasty bacteria/viruses from them! Diaper changing pads to lay on any surface for a quick change…again there are super gross germs on those changing tables! Quality breast pump…our milk is the best for baby but there is not always a proper place available for feeding. We have no shame in it but other folks ( think young teenage boys) with families in eyeshot range see it as indecent. Congrats Chicky! So much fun on your way.

  6. LOVE your recipes. I’m mama to a 4yo and 15mo- my top few must-haves would be the Ergo carrier, Brest Friend pillow, Motherlove nipple cream, Sleep Sheep white noise machine, Aden & Anais swaddle blankets, and Arm’s Reach co-sleeper. Congrats!! ๐Ÿ™‚

  7. The Baby K’Tan wrap was my favorite when my daughter was an infant. It allowed me to not have the bulk of some of the other carriers (used Ergo later on and loved it), but a bit more security than a sling. The Fisher Price Rock n Play was also a life saver. It’s more low tech than many of the sleepers out there and is also easily transportable.
    Also the Uppa Baby G Lite stroller is awesome for when they’re a little older.

    1. Yes, those two carriers are the best in my opinion. The rock n play is a must have. My third baby is 8 weeks and the rock n play was borrowed from a friend since this is our last. I wish we had, had it for all three. The baby is propped up so there are no worries about baby choking on spit up. This is coming from a mother of three babies with acid reflux. I’d also research strollers really well. I bought a big convertible stroller that went with my car seat. Big mistake, it was huge and took up all the room in my Jeep Grand Cherokee. Get one that is light and folds up small! One last thing invest in a swing, all three of my babies loved it. It’s nice to get a break, especially when cooking.   8. Our top three can’t live without items are our BOB stroller, mama roo(easy to find gently used), and swaddleme pods(newborn) and swaddleme sleep sacks.

  9. My top two picks are a good baby carrier (Sollybaby is my favorite for newborns with this Texas heat) and a lightweight, portable crib like the Guava Lotus Travel Crib. It’s pricey, but it’s stylish, easy to use, folds up compact for travel, and you don’t have to worry about weight limits because the mattress sits on the floor.

  10. Congratulations!โค๏ธMy advice would be to think about where and how you will use a stroller/car seat and then go check them out! It’s a little overwhelming with all the choices and it feels like you are test driving cars. I also think that shopping for some cute button up tops and dresses are a good idea if you plan to nurse (Madewell plaid and chambray shirts are the best)!

  11. Roasted broccoli is the best! Can’t wait to try this recipe! My son is now 5 years old so I don’t even know what new and improved baby gear is out there. However I would definitely invest in a good carrier where you can have the baby close to your chest but still have your hands free. We had the Bjourn, but I know there’s way better options out now. My son wanted to be held all the time so this was very helpful. Also invest in a top of the line stroller. I got a crappy one from Graco and I highly regret it.

  12. I would definitely recommend a 4moms Rockaroo or Mamaroo. They’re great at settling a fussy baby and giving them a safe place to rest that’s not the crib or carseat. A Sollybaby wrap or Ergobaby was also a must for me. It calms the baby and gives you your hands back. We also really loved the Love To Dream zip swaddles. Easy on and off and very soothing.

  13. Magnetic closure sleep sacks! Yes, even snaps are too hard sometimes ๐Ÿ˜‰ People love to buy you baby clothes instead of what’s on your registry because they are so darn cute. So put some useful options like these on there and then you don’t have to get them yourself!

  14. I’d say our most used things during the first year were the 4moms mamaroo, the exersaucer, and the activity play mat/gym. Oh and side-snap (kimono style) shirts until the umbilical cord fell off! So excited for y’all!
