These are delicious! My oven started acting up right after I mixed up the batter, so I had to make them as pancakes in a cast-iron skillet. They turned out great! They’d be perfect for meal prep when the oven is back in action, but I’d make them again as pancakes, too.

So good!! The only thing I had trouble with was they stuck really bad to the muffin papers! I bet if I spray the papers next time they will come out easily! Delicious though!!! Will definitely be making again. 🙂
