The theme for this week’s meal plan is “hands-off.” We’re in the throes of back-to-school in my house and while I work to find my footing in this new schedule, I’m leaning on super reliable, minimal-fuss recipes to get us through. Whether you’re in the same season as us or not, I hope this week’s meal plan (+ shopping list!) helps you get a healthier, tasty dinner on the table with more ease.

Cook Once Tip

On your meal prep day, make the sweet potato hash, antipasto salad, and chocolate chip cookies. If you have time, chop all veggies needed for both the tacos and Cajun sheet pan dinner. Follow the directions HERE to cook both pork tenderloins + rice (dinner on Monday and Wednesday evenings) at the same time.
