  • Dates – you can grab pitted or unpitted Medjool dates here. The pitting process is really easy, so if those are significantly less expensive, it’d definitely be worth saving the money and quickly removing the pits yourself.
  • Protein powder – any vanilla protein powder you love will work great here. We stick with Equip’s vanilla protein because it’s made with grass-fed beef isolate powder.
  • White chocolate chips – this ingredient is a fun add in, but not necessary! If you’d rather keep this snack 100% whole-food, feel free to skip the white chocolate chips.

How to Make Key Lime Pie Balls

This recipe is genuinely as easy as it gets. The food processor does all of the hard work for you – you’ll just need to roll the mixture in balls once it’s done! Follow along below for the full, super easy how-to.

Step 1: Place the dates in the food processor and pulse until they look caramel-like.

Step 2: Add the cashews to the caramel-like dates, and process until a sand-like texture forms. Add the almond butter and coconut, then pulse again until evenly mixed.

Step 3: Add the protein powder, half of the lime zest, all of the lime juice, and salt to the mixture, and process again until smooth.

Step 4: Add half of the white chocolate chips to the food processor and pulse 2-3 times, until just incorporated.

Step 5: Use a large cookie scoop to portion the 12-ish balls, and then use your hands to press the balls firmly together. The mixture will likely be a little crumbly, but using your hands will help you to get them packed together.

Step 6: Melt the remaining white chocolate chips with 1 teaspoon of coconut oil in a microwave for about 30 seconds.

  • ¾ cup cashews
  • ½ cup almond butter
  • cup unsweetened shredded coconut
  • 2 scoops protein powder
  • Zest of 2 limes
  • Juice of 1 lime
  • ½ teaspoon sea salt
  • ½ cup white chocolate chips, divided
  • 1 teaspoon coconut oil

Instructions 

  • Place the dates in a food processor and pulse until it looks caramel-like. Add the cashews and process until it forms a sand-like texture with the dates.
