Sparkling Peach Sangria

Peach season might be my favorite time of the year.

Just imagine finding the perfect peach …

It’s a beautiful, early summer day. The sun is warm and there’s a good breeze.

You grab your favorite sunglasses, hop in the car, and turn up the music for a long drive.

{Do other people still go for rides like I do? I hope so. It’s good for the soul.}

On your drive, you spot a little sign on the road that says “Peaches! 1 Mile.”

Since you’re already in blissful impulse land, you decide to pull over.

You give a friendly “hello” to the sweet sun-kissed farmer and start perusing the fruit.

You spot a large, vibrant, fuzzy, warm peach.

You pick it up … it’s heavier than it looked … and give it a whiff.

Oh my goodness.

It’s the sweetest, most intense, peachiest peach smell you’ve ever experienced.

It smells like summer love and patio dinner parties.

You gladly hand the farmer $5 for a large box and start imagining how you’ll put these amazing gems to good use.

At least, that’s what I did last weekend.

I came up with a few incredible ode-to-the-peach recipes that I can’t wait to share with you.

For starters, let’s have a cocktail.

Like peaches? Like sangria? How about champagne?

Welp, I’ve got JUST the drink for you, my friend!

I made peach sangria by infusing a sweet moscato wine with fresh-cut peaches and fresh thyme.

Thyme?? Yes, it’s my favorite herb to compliment a peach. Check out my Paleo Peach Cobbler for another example.

I stirred in a bottle of prosecco {Italian sparkling wine} just before serving to take the edge off the sweetness and give the cocktail even more bubbly life.

The peach, thyme, and sparkling wine make this a well-balanced, fragrant, refreshing cocktail that everyone loved.

Start off by cutting the peaches into slices.

Toss them into a large pitcher.

Grab a bottle of chilled moscato. I used this 2012 Saracco Moscato d’Asti. It’s slightly fizzy, affordable, and award winning. Score!

Open the bottle …

Pour it over the peaches.

Add a few sprigs of fresh thyme and then let the mixture chill for at least 4 hours or overnight in the refrigerator.

When you’re ready to serve, grab a bottle of champagne, prosecco, or sparkling white wine. I used this organic Monetto Prosecco D.o.c. Treviso.

Pour it into the pitcher and stir.

Serve over ice and garnish with fresh thyme and a peach wedge.

Sparkling Peach Sangria

Makes 8-10 Servings

Ingredients

5 Fresh Peaches

6 Sprigs of Fresh Thyme

1 Bottle Moscato Wine {I used a 2012 Saracco Moscato d’Asti}

1 Bottle of Champagne, Prosecco, or Sparkling Wine {I used Monetto Prosecco D.o.c. Treviso}

Directions:

Remove the peach’s pit and cut the flesh into wedges.

Add the peaches, thyme, and moscato to a large pitcher.

Stir together then let sit for at least 4 hours {or overnight so that the flavors can infuse}.

Just before serving, pour in the sparkling wine and stir.

Pour over ice and garnish with fresh thyme and a peach wedge.

Enjoy!

Prep Time: 5 min

Infuse Time: 4 hours
