How to Make Korean Beef Bowls

This recipe is really easy to make and can be prepped ahead of time for easy assembly, if you’d like! Follow along below for the full, super easy how-to.

Step 1: Add the ribboned carrots, apple cider vinegar, and peppercorns to a jar with a lid, shake, and let sit for 30 minutes or overnight.

Step 2: Whisk the coconut aminos, rice wine vinegar, toasted sesame oil, fish sauce, garlic powder, ginger, and red pepper flakes together in a bowl.

Step 3: Cook the rice according to package instructions. While the rice simmers, cook the ground beef over medium heat until crumbled and cooked through. Pour the sauce over the cooked ground beef and stir until evenly coated.

Step 4: Whisk together the mayo, lime juice, and sriracha to make the sriracha mayo.

For the Pickled Carrots

  • 3 large carrots, cut into ribbons
  • ½ cup apple cider vinegar
  • 2 teaspoons black peppercorns

For the Sauce

  • 8 ounces coconut aminos
  • 1 tablespoon unseasoned rice wine vinegar
  • 2 teaspoons toasted sesame oil
  • ½ teaspoon fish sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon ginger
  • ¼ teaspoon red pepper flakes

For the Sriracha Mayo

  • ½ cup mayonnaise
  • 1 tablespoon fresh lime juice (the juice from about ½ of a lime)
  • 1-2 tablespoons sriracha

For the Bowls

  • 2 pounds ground beef
