Whenever I host any kind of gathering, I like to plan a pitcher cocktail (or mocktail). We’ll always have stocked water, sparkling water, wine, and beer (for our beer-drinking friends), but I think it’s SO FUN to also have some kind of seasonal pitcher to enjoy. The beauty behind a great pitcher cocktail is that they can be whipped up SO easily, but add a really lovely touch to the occasion.

Lemon Ginger Punch

This Lemon Ginger punch is another pitcher cocktail that I adore! It calls for just 3 ingredients, so it’s arguably one of the easiest pitcher drinks I’ve ever crafted. All you need to do is squeeze a few lemons in a pitcher, add a couple bottles of ginger beer (a non-alcoholic ginger soda), and a bottle of Prosecco. I prefer Prosecco over champagne because they’re usually more affordable and, when I’m mixing it with other ingredients, don’t need to be too picky about wine flavors. Note that you can also use sparkling water here, if you’re wanting a mocktail option!

I like to serve it up in champagne flutes with a twist of lemon. It makes a lovely before-dinner sip (during an appetizer round), brunch mimosa alternative, or even poolside libation!

Ingredients  

  • Juice of four lemons
  • 1 lemon thinly sliced
  • 2, 8 ounce bottles ginger beer
  • 1 bottle prosecco
  • Lemon rind for garnish

Instructions

  • Juice the lemons into a large pitcher.
  • Add sliced lemon, ginger beer, and prosecco, then stir.
  • Garnish individual glasses with lemon rind.
