These chocolate dipped apricot bites are first up in our meal prep snack series and can easily double as a dessert too.

For these chocolate dipped apricot bites, we simply melted our favorite dark chocolate chips, dipped the dried apricots in, and then laid them on a parchment paper lined baking sheet and sprinkled them with a little bit of coarse sea salt. In each bite, you’ll get the sweet tangyness of the apricot, the slight bitterness and richness of the dark chocolate, and a little bit of crunchy salt for the perfect flavor combination. If you’d like, you can take the chocolate dipped apricot bites to the next level with additional toppings – slivered almonds, pecan pieces, and shredded coconut would all be delicious!

Chocolate Dipped Apricot Bites

A delightfully easy sweet treat that’s make ahead friendly for when your sweet tooth strikes!

Ingredients  

Instructions 

  • Line a baking sheet with parchment paper.

Melt the dark chocolate using one of the methods below:

  • Double-boiler method: place the chocolate in a medium-sized glass bowl that can rest on top of a pot without falling in. Fill the pot with a couple inches of water, place the bowl of chocolate over top, and bring the water to a boil. Use a spatula to constantly stir the chocolate until it’s melted and smooth.
  • Microwave method: place the chocolate in a medium-sized glass bowl and microwave it in 20-second increments, stirring well between each spell, until it’s melted and smooth.
  • Dip the apricots halfway into the dark chocolate, then place on the parchment paper and sprinkle with sea salt. Let sit for 30 minutes, or until chocolate has hardened, then store in the refrigerator.
